Banana Pepper Fritters / Chilly Bajji

Ingredients: Banana Peppers / Chilly used for fritters / Bajjji Milagai - 6 Gram flour – 2 Cups Rice flour – 1 Cup Red chilli powder – 1tsp or as you like Asafoetida – a pinch Orange Color – 2 pinches Salt – to taste Cooking Oil Cooking Instructions: You can see the image of Banana Pepper below Mix gram flour, rice flour, salt, red chilli powder, asafoetida, and orange color with enough amount of water. The batter should be in the in the dosa batter consistency. If the batter becomes too watery, the batter won’t sick in the onion, instead it absorbs more oil while cooking. French Fries

Ingredients: Potato (meant for baking) – 5 Chilly Powder – 1 tsp Salt – to taste Cooking Oil Cooking Instructions: Clean and wash the potatoes well and peel off the skin and cut into our finger size thickness and height. Soak the cut potatoes into cold water for about 15 minutes. After that drain the excess water, and let it to cook in hot water until the potatoes are 40% cooked and not more than that. Again drain the excess water and pat it dry with the kitchen towel. Now heat oil in a deep pan and the oil should be very hot to fry potatoes. Deep fry the potato strips in batches and cook until it turns golden brown. Repeat the process for all the potato strips. Tandoori Chicken

Ingredients: Chicken Legs – 4 Hung Curd – 4 tbsp Ginger Garlic Paste – 1 tsp Coriander Powder – 1 tsp Chilly Powder – 1 tsp Turmeric Powder – ¼ tsp Pepper Powder – ½ tsp Cumin Powder – 1 tsp Garam Masala – 1 tsp Food Color (red) – a little Lime – ½ (extract juice from it) Salt – to taste Cooking Oil Cooking Instructions: I purchased a microwave oven in this new year and am keep trying recipes in it. This tandoori chicken recipe is the first microwave oven recipe in my blog. Mix curd, ginger garlic paste, coriander powder, chili powder, pepper powder, turmeric powder, cumin powder, garam masala, food color, lime juice and salt together in a bowl and mix well. A Trip to Amirdhi Forest and Soya chunks / Meal Maker Vadai

Amirdhi / Amirthi Forest lies to the southeast of Vellore, Tamilnadu. The forest is rich with different species of Flora and Fauna. A substantial part of this jungle has been cleared to serve as a tourist resort where as the rest of the forest has been declared a wildlife sanctuary. A trek for a kilometer leads one to a panoramic view of a seasonal waterfall. Amirthi is one of the nice spots for one day picnic. As my hubby was already been there 10 year before, today being the Christmas holiday, we visited the spot again with my son and husband. We went to Old Bus stand in Vellore by bike and waiting for the bus number 11C or 15 which goes to Amirthi forest directly. We were there by 9.45 AM in the morning and the shop owners near the bus stand asked us to wait for some time at the bus stand. We also waited for about 30 minutes, but no bus has come. Mushroom Soup

Ingredients: Button Mushrooms – 200 gms Onion – 2 ( finely chopped) Milk – 400ml Butter – 1 tbsp Wheat Flour – 2 tbsp All Purpose Flour / Maida – 1 tbsp Bay Leaf – 2 Cloves - 2 Pepper Corns – 4 Pepper Powder – to taste Salt – to taste Cooking Instructions: Clean the mushrooms with a damp cloth and chop the caps and stems. Take 5 pieces of mushroom and slice it into thin pieces and keep aside. Pour the milk in a pan along with bay leaf, pepper corns, and cloves. When the milk starts to boil well, switch off the flame and strain the milk in a bowl. Now, heat up the butter in a medium pan and add chopped onions to it and cook until they're soft but not browned. Next add the mushrooms to it, and cook over a high heat for 3 minutes whilst stirring constantly. Sprinkle the wheat and all purpose flour over the mushrooms and mix well to combine. Chicken Soup

Ingredients: Chicken – 100 gms (finely chopped) Chicken bones – 200gms Small / Baby Onions – 20 (peel off the skin and cut into two halves) Pepper Powder – 4 tbsp or to your taste Corn Flour – 5 tbsp Cumin Seeds – 1 tbsp Green Chilly – 3 (cut it lengthwise) Coriander Leaves – few (finely chopped) Salt – to taste Cooking Oil – 1 tbsp Cooking Instructions: Clean and wash the chicken and its bones. Drain the excess water. Heat oil in a pan and sauté it with cumin seeds, green chillies and onions. Add this in a pressure cooker along with chicken and its bones. Add pepper powder an coriander leaves and salt to it and add 2 or 3 glasses of water. Close the lid of the cooker and let it to cook until the chicken and bones are cooked well. Once it is cooked, open the lid of the cooker. Dissolve corn flour in little amount of water and add it to the cooker. Now bring this to boil well until we get a thick consistency of soup.
