Pepper Mutton / Mutton Chukka Varuval INGREDIENTS Mutton -- 250 gms Pearl onion -- 2 cup chopped Red chillies -- 2 Curry leaves Salt to taste Pepper - jeera powder -- 3 tsp Chilli powder -- 1 tsp Turmeric powder -- 1 tsp METHOD OF PREPARATION : ) Heat a ladle of oil in a pressure cooker . Once hot , add onion and saute till tender .Add curry leaves and red chillies to it. 2) Then , add mutton to it and saute till it leaves water . 3) Then add all the other ingredients with a cup of water and pressure cook for 6-7 whistles till the mutton is cooked well and leaves oil.Open the lid and mix well till it forms thick gravy. Mutton Chukka

Ingredients :   Mutton - 1/2 kg (clean and cut into cubes) Pepper Powder - 2 tsp Cumin Powder - 1/2 tsp Chilly Powder - 1/2 tsp Garam Masala - 1/2 tsp Ginger Garlic Paste - 2 tsp Salt - to taste Cooking Oil - 5 tbsp Cooking Instructions : Add mutton pieces and enough amount of water in a pressure cooker and cook until the mutton is soft and well done. Do not drain off the excess water (which we call as soup) since you can use it while frying the mutton which gives an added taste. Heat oil in a pan and fry the pepper powder, chilly powder, cumin powder and garam masala and ginger garlic paste for a while until the raw smell leaves off. But do not burn it off and so take care while u fry the dry powders. Add the cooked mutton along with the soup and required amount of salt to it now and cook until the gravy becomes dry. ...

Madurai Mutton Briyani

Ingredients: Mutton – 500 gms Basamti Rice - 1 cup (400 gms) Tomato – 3 medium size (finely chopped) Onion – 1 (finely chopped) Green Chillies – 4 (cut it lengthwise) Chopped Mint Leaves – one handful Chopped Coriander Leaves – 3 tbsp Coriander Powder – 1 tbsp Chilli Powder – 1 tbsp turmeric Powder - 1/4 tsp Ginger Garlic Paste – 2 tbsp Cloves – 4 Cinnamon – 4 Bay Leaf – 4 Cardamom – 3 Aniseeds – 1 tbsp Salt – to taste Ghee – 3 tbsp Cooking Oil Cooking Time: 20 minutes Service For: 3 People Cooking Instructions: Measure the rice in a cup. For 1 cup of rice, we need 1 and 1/2 cups of mutton soup + water together for cooking. Wash the rice only once. Soak the rice in water for 10 minutes and drain the excess water. Wash the mutton well and drain the excess water completely and cut into cubes. Add mutton pieces in cooker and and pressure cook until the mutton is cooked well. Mutton Curry

Ingredients: Mutton – ½ kg Onion – 1(finely chopped) Medium size Tomatoes – 2 (finely chopped) Ginger Garlic Paste – 1 tbsp Coriander Powder – 1 tbsp Chilly Powder – ½ tbsp Pepper Powder – 2 tbsp Cloves – 4 Cardamom – 4 Aniseeds – 1 or 2 tbsp Bay Leaf – 2 Cinnamon - 2 Salt – to taste Cooking Oil Cooking Instructions: Wash and clean the mutton and cut it into cubes and keep it aside. Heat a tbsp of oil in a pan and add onions and tomatoes and sauté it well. Let this mixture cool a while and then grind it to a smooth paste. Heat 5 tbsp of oil in a pressure cooker and sauté it with cloves, cinnamon, aniseeds, bay leaves and cardamom. Add grinded paste and ginger garlic paste to it and stir fry until the raw smell leaves off. Now add turmeric powder, coriander powder, chilli powder and pepper powder and stir fry it well. Mutton Kolambu (Type 2) and Awards!

Ingredients : Mutton - 1/2 kg (wash and cut into cubes) Kolambu Powder - 4 tbsp Tomato - 3 (finely chopped) Onion - 1 (cut it lengthwise) Curry Leaves - few Salt - to taste Cooking Oil Service For : 3 People Cooking Time : 30 minutes Cooking Instructions : Simply add tomatoes and onions, curry leaves and salt and mutton in a pressure cooker. Add required water and kolambu powder to the cooker so that no lumps are found. Close the lid and simmer the flame and let it cook for about 20 minutes or until mutton is well cooked. Hyderabadi Briyani

Ingredients: Basmati Rice – 500 gms Meat – 500 gms Onion – 2 (finely chopped) Curd – 500 gms Green Chilly – 7 (cut it lengthwise) Ginger Garlic Paste – 2 tbsp Lime – 1 (extract juice from lemon) Cardamom – 4 Cinnamon – 4 Cloves – 6 Aniseeds – 1 tbsp Saffron – a pinch (dilute it in a tsp of milk) Coriander Leaves – few (finely chopped) Mint Leaves – few Salt – to taste Cooking Oil Cooking Instructions: Heat oil in a pan and add ½ tsp aniseeds, 2 cinnamon, 2 cardamom, 3 cloves and fry it a while. Add half of the finely chopped onions to it. Add 3 green chilies, ginger garlic paste, coriander leaves and mint leaves and fry a while and switch off the flame. Add curd to it. Marinate this mixture in the chopped meat for half an hour. After half an hour, cook the meat in pressure cooker with required meat and salt. Mutton Chalna

Ingredients: Mutton with bones – 200 gms Red Gram – 50 gms (cook in pressure cooker) Onion – 1 (finely chopped) Tomatoes – (finely chopped) Coriander Powder – 3 tbsp Chilli Powder- 2 tbsp Turmeric Powder – 1 tbsp Fenugreek Powder – ½ tsp Ginger Garlic Paste – ½ tbsp Garam Masala – 1 tbsp Bay leaves, Cloves, Cinnamon. - 2 pieces in each Salt – to taste Cooking Oil Cooking Instructions: Heat oil in a cooker and sauté it with cloves, cinnamon and bay leaves. Add onions and tomatoes to it and stir fry it well. Add ginger garlic paste, fenugreek powder, coriander powder, chilly powder, turmeric powder and salt to it and fry it until the raw smell leaves off. Add mutton pieces and cooked gram and enough water to it and close the lid of the cooker. Let it to cook until the mutton is cooked well. Open the lid of the cooker and let it to boil in a simmer flame until the gravy thickens well. Side Dish: parota, briyani

Mutton Kolambu (type 1)

Ingredients : Mutton - 1/2 kg Onion - 1 Dry Chilly - 5 Cumin Seeds - tbsp Coriander Leaves - 50 gms Turmeric Powder - 1/2 tsp Salt - to taste Cooking Oil Service For : 3 People Cooking Time : 30 minutes Cooking Instructions : Grind red chilly, cumin, coriander to a fine paste. Heat oil in a cooker and saute it with finely chopped onions. Add turmeric powder, mutton, fine paste and required salt and water and close the lid of the cooker. Let it to cook until the mutton boils well. Open the lid and let it to boil until the oil separates from kolambu. It can be served with hot rice and rotis.

Mutton Kuruma

Ingredients : Mutton - 1/2 kg Grated Ginger - 2 tsp Garlic Pods - 6 Onion - 2 (finely chopped) Tomatoes - 4 Coconut - 1/2 Coriander Powder - 2 tbsp Red Chilly Powder - 3 tsp Turmeric Powder - 1 tsp Garam Masala - 2 tsp Coriander Leaves - few (finely chopped) salt - to taste Cooking Oil Service For : 3 People Cooking Time : 40 minutes Cooking Instructions : Grind ginger, garlic and coconut to a fine paste. Heat oil in a pressure cooker and saute with onions, tomatoes until the water separates from it. Add coriander powder, turmeric powder, chilly powder, garam masala, salt and fine paste to it. Add mutton and required water and salt to it and close the lid of the cooker. Let it cook until mutton is well cooked. Open the cooker and bring it to boil until it gets a thick consistency.
