Mutton Curry

Ingredients: Mutton – ½ kg Onion – 1(finely chopped) Medium size Tomatoes – 2 (finely chopped) Ginger Garlic Paste – 1 tbsp Coriander Powder – 1 tbsp Chilly Powder – ½ tbsp Pepper Powder – 2 tbsp Cloves – 4 Cardamom – 4 Aniseeds – 1 or 2 tbsp Bay Leaf – 2 Cinnamon - 2 Salt – to taste Cooking Oil Cooking Instructions: Wash and clean the mutton and cut it into cubes and keep it aside. Heat a tbsp of oil in a pan and add onions and tomatoes and sauté it well. Let this mixture cool a while and then grind it to a smooth paste. Heat 5 tbsp of oil in a pressure cooker and sauté it with cloves, cinnamon, aniseeds, bay leaves and cardamom. Add grinded paste and ginger garlic paste to it and stir fry until the raw smell leaves off. Now add turmeric powder, coriander powder, chilli powder and pepper powder and stir fry it well. A Trip to Amirdhi Forest and Soya chunks / Meal Maker Vadai

Amirdhi / Amirthi Forest lies to the southeast of Vellore, Tamilnadu. The forest is rich with different species of Flora and Fauna. A substantial part of this jungle has been cleared to serve as a tourist resort where as the rest of the forest has been declared a wildlife sanctuary. A trek for a kilometer leads one to a panoramic view of a seasonal waterfall. Amirthi is one of the nice spots for one day picnic. As my hubby was already been there 10 year before, today being the Christmas holiday, we visited the spot again with my son and husband. We went to Old Bus stand in Vellore by bike and waiting for the bus number 11C or 15 which goes to Amirthi forest directly. We were there by 9.45 AM in the morning and the shop owners near the bus stand asked us to wait for some time at the bus stand. We also waited for about 30 minutes, but no bus has come. Seppankilangu / Colocasia Fry

I don't eat colocasia but use to cook at home for my hubby. when i saw this recipe in sujatha's blog, i really loved it and tried at home and the taste was really good! Ingredients: Colacasia (Seppankilangu) – ¼ kg Onions – 1 (finely chopped) Tomato - 1 (finely chopped) Chilli Powder - 1 tsp or adjust it to ur taste Mustard seeds – 1 tsp Curry leaves - a few Salt- to taste Cooking Oil Cooking Instructions: Clean the colocasia well in water. Add colocasia and enough amount of water in a pressure cooker and let it to boil just for 2 or 3 whistles in high flame and switch off the flame. Do not let it to overcook at any cost. Immediately release the pressure of the cooker and open the lid and drain the excess water. Peel off the skin and cut them into thin round slices. Heat a little oil in a pan and put few pieces of slices in it and deep fry them until it turns golden brown. Repeat the process for all the remaining slices. Kovakkai / Ivy Gourd / Dondakai Masala

Ingredients: Kovakkai- 250gms (cut lengthwise) Onion - 1 (finely chopped) Coriander Powder- 2 tsp Chilli powder – 1 tsp or adjust to your taste Turmeric Powder- ½ tsp Ginger Garlic Paste - 1 tsp Mustard Seeds – 1 tsp Curry Leaves - few Salt - to taste Cooking Oil Cooking Instructions: Heat oil in a pan and sauté it with mustard seeds and curry leaves. Add the chopped onion and ginger garlic paste and fry till the onions become soft. Add coriander powder, chilli powder and turmeric powder and fry for a while until the raw smell leaves off the dish. Add water a little if required in this stage. Now add kovakkai pieces to it and fry a while. Add little amount of water (since we are going to prepare dry masala) and let the vegetable to cook well. Once the vegetables is cooked and become soft, switch off the flame and transfer it to the serving bowl. Side Dish: Goes well with hot rice

Raw Banana / Valakkai Fry

Ingredients: Raw Banana Р2 Onion - 1 (finely chopped) Mustard Seeds Р1 tsp Broken Black Gram Р1 tsp Dry Red Chilly Р3 Curry Leaves Рfew Salt- to taste Cooking Oil Cooking Instructions: Peel off the skin of raw banana and cut it into small cubes. Add the raw banana cubes in a pan with enough amount of salt and 2 glasses of water. Let it to cook in a high flame. It will get cooked within 5 minutes. It should not be overcooked since it spoils the taste of the dish. When the raw banana cubes are cooked, switch off the flame and drain the excess water and keep them aside. Let it to cool for few minutes. Heat oil in a pan and saut̩ it with mustard seeds, broken black gram dry chilly and curry leaves and onion. Add cooked raw banana and stir fry it for few minutes and switch off the flame. Side Dish: Serve it with hot rice
