Kesar Pistachio / Pista Ice Cream and Here in a Long Break!

Hi Friends!

Happy to meet u all again after a long gap! We are little busy here since we shifted our place and i was unable to post all my recipes in this break period, though a lot is there in my drafts! Am sure that will join u soon again in the next month once we settled there and hope u all know that it takes time to settle in a new place!

Here is a Summer Treat for you all!


Ingredients:

Milk Powder - 1 cup
Fresh Cream - 1 cup
Sugar - 1 cup
Water - 2 cups
Saffron - a few strands
Green Food Colr - a very few drops
Food Stabilizer - 1/2 tsp
Pista Essence - 1/2 tsp (optional)
Pistachios , Almonds, cashews - few ( grind it coarsely together)

Preparation Method:

Images shown here is taken before it is well freezed.




Mix milk powder in the water without any lumps. Add sugar, fresh cream, pista essence, food color and saffron to it and blend it well with the hand blender itself. Now add stabiliser to it and blend once again. Shift this mixture in an airtight container.

Now keep this mixture in the freezer for about 6 hours. Ice cream is ready to serve after 6 hours.


Tips for Preparing Ice Cream:




We are adding stabilizer to soften the ice cream. No problem if u don't have stabilizer.

Food stabilizer is available in all stores in India. I don't know whether it is available or not in other countries. You please inquire its availability in the stores or otherwise it will be available in all the stores which are selling essence.

Food Stabilizer is a very fine powder available in small packets which are used while preparing ice creams and squash. But i heard that food stabilizer is available in liquid state also.

In the interval of each hour, take the ice cream out of freezer and beat well and then let it to set in freezer. Do this process at least for 5 times.

Do not add more stabilizer which makes the ice cream to attain room temperature in few minutes itself as soon as u remove from freezer.

I garnished the ice cream with tutti frooti.

Ingredients for Cherry Cookies: All Purpose Flour / Maida - 2 cups Cornflour – 1 cup Icing Sugar – 1 1/2 cup Butter – 1 1/2 cup(in room temperature) Vanilla essence - 2 tsp Cooking Instructions: Sift together maida, cornflour and icing sugar. Cream the butter with a fork and add the vanilla essence and beat well. Now add the flour mix to the butter mix 1 tbsp at a time and mix well thoroughly. Add 1 tbsp milk if the mix is too dry or add a little of flour, if the mixture is little watery. Make small balls out of the mix and flatten a bit and place a whole cherry in the middle. Grease the baking tray and spread a little of flour on that.
