Jeera Rice is a simple and a flavorful rice, which is easy to cook and tastes awesome with simple ingredients in it. When I run out of vegetables in refrigerator, I simply cook it and we can pack for lunch too. Any gravy will match with Jeera Rice. I use to make tiffin sambhar along with Jeera Rice. Everyone can think sambhar with Jeera rice? But you will accept that it’s a great combo, when you give a try. I use to prepare it regularly in my home and especially during Pongal festival, along with lemon rice, curd rice and sweet jaggery rice.
Ingredients:
To Cook Rice:
Raw Rice | 2 cups |
Water | 10 cups able for |
Cooking Oil | 1 tsp (optional) |
Salt | 1 and 1/4 tbsp or adjust according to your taste |
Curry Leaves | 3 sprigs |
To Temper:
Cashews | 20 to 25 |
Pepper | 1/2 heaped tbsp |
Cumin Seeds / Jeera | 1 and 1/4 tbsp |
Asafetida | 1/2 tsp |
Cooking Oil | 4 and 1/2 tbsp |
Cooking Instructions:
Take 2 cups of rice in a pan/ pot. Wash and clean the rice until the water runs out clear. Add washed rice to a pan or pot and 10 cups of water, along with rice and cook it in higher flame.
Add salt and cooking oil ( oil to avoid sticking of rice with one another and it is optional) to it and bring it to boil in high flame and then simmer the flame. Cook until the rice is 80% cooked i.e., the rice should not be fully cooked and become soft. When you press the rice with your fingers, it should be broken easily but not mushy.
At this stage, switch off the stove and drain the excess water in colander. Then let the rice to cool down in a large plate. Sprinkle curry leaves in the rice now and a nice aroma comes out of it.
Heat oil in a pan and when it becomes hot, add cashews and wait till it slightly starts to change in color. If the color starts to change, simmer the flame and add Peppercorns and when it starts to crackle, add cumin seeds and asafetida and switch off the flame immediately. Let the mixture to cool.
Once it is cooled, add the tempered items to the cooked rice and mix gently. Check for salt, if you feel less salty, add it accordingly. Transfer the rice to serving bowl and Jeera Rice is ready to serve!
