I don't eat colocasia but use to cook at home for my hubby. when i saw this recipe in sujatha's blog, i really loved it and tried at home and the taste was really good!
Ingredients:
Colacasia (Seppankilangu) – ¼ kg
Onions – 1 (finely chopped)
Tomato - 1 (finely chopped)
Chilli Powder - 1 tsp or adjust it to ur taste
Mustard seeds – 1 tsp
Curry leaves - a few
Salt- to taste
Cooking Oil
Cooking Instructions:
Clean the colocasia well in water. Add colocasia and enough amount of water in a pressure cooker and let it to boil just for 2 or 3 whistles in high flame and switch off the flame. Do not let it to overcook at any cost. Immediately release the pressure of the cooker and open the lid and drain the excess water.
Peel off the skin and cut them into thin round slices. Heat a little oil in a pan and put few pieces of slices in it and deep fry them until it turns golden brown. Repeat the process for all the remaining slices.
Heat a tbsp of oil in a pan and sauté it with mustard seeds and curry leaves. Add onions and tomatoes and chilly powder and required amount of salt to it and fry until tomato is mashed well. Now add the fried colocasia to it and mix well and let it cook for 2 minutes. Switch off the flame and transfer it to the serving bowl.
Side Dish: Goes well with rice
