Snake Gourd / Podalangai Poriyal

Ingredients:

Snake Gourd – 1
Onion – 1 (finely chopped)
Dry Red Chilly – 3
Grated Coconut – 1 tbsp (optional)
Mustard Seeds – 1 tsp
Broken Black Gram – 1 tsp
Curry Leaves – few
Salt – to taste
Cooking Oil

Cooking Instructions:



Wash and clean the snake gourd. Cut the snake gourd vertically into two halves. Deseed the centre portion which is little spongy and it is not used to cook. Cut the vegetable into small cubes. Add this vegetable in the pressure cooker with required amount of water and salt and let it to cook for 2 whistles or until the vegetable is well cooked. The cooked vegetable should be little hard otherwise it will be mashed while frying. So cook the vegetable accordingly. Now drain the excess water completely from the cooked vegetable.

Heat 2 tbsp of oil in a pan and sauté it with mustard seeds and broken black gram. Add red chillies, curry leaves and onions and fry it until the onion is cooked well. Now add cooked vegetable to it and fry until the water is completely absorbed by the dish. Transfer it to the serving bowl and once the vegetable is cooled add grated coconut to it and mix it well. Podalangai Poriyal is ready to serve!

Side Dish: Tastes good when served with hot rice.

Ingredients for Cherry Cookies: All Purpose Flour / Maida - 2 cups Cornflour – 1 cup Icing Sugar – 1 1/2 cup Butter – 1 1/2 cup(in room temperature) Vanilla essence - 2 tsp Cooking Instructions: Sift together maida, cornflour and icing sugar. Cream the butter with a fork and add the vanilla essence and beat well. Now add the flour mix to the butter mix 1 tbsp at a time and mix well thoroughly. Add 1 tbsp milk if the mix is too dry or add a little of flour, if the mixture is little watery. Make small balls out of the mix and flatten a bit and place a whole cherry in the middle. Grease the baking tray and spread a little of flour on that.
