Spinach / Keerai Poriyal

Spinaches are highly rich in proteins and it contains about 57.8% of proteins in it. I have used manathakkali keerai in this recipe but you can use any type of keerai.

Ingredients:

Spinach – 1 bunch
Onion - 1 (finely chopped)
Dry Red Chilly – 4
Grated Coconut – 1 tbsp (optional)
Mustard Seeds – 1 tsp
Broken Black Gram – 1 tsp
Salt – to taste
Cooking Oil

Cooking Instructions:

Wash and clean the spinach. Drain the excess water.

Heat 3 tbsp of oil in a pan and saute it with mustard seeds and broken black gram. Add onion and dry red chilly to it and fry until the onion turns golden brown.
Add spinach and a little amount of salt to it and stir fry until the spinach is cooked well and it becomes soft. Do not add water while cooking. The water in the spinach is enough to cook it. If you need water to add, just sprinkle a little.
Once the spinach is cooked, switch off the stove and transfer it to the serving dish. Let it cool for 5 minutes. Now add grated coconut to it and mix it well.
